Preparation
- For stuffing, combine pear, hazelnuts (or almonds), carrot, breadcrumbs, onion, ginger, salt, and pepper in a small bowl; set aside.
- Trim any fat from meat. Butterfly the meat by making a lengthwise slit down the center to within ½ inch of the underside. Open flat; pound with the flat side of a meat mallet to about ¼-inch thickness.
- Spread stuffing over the meat. Fold in the ends. Starting from a long side, roll up the meat. Secure with kitchen string or wooden toothpicks. Place the meat roll on a rack in a shallow roasting pan. Brush lightly with oil. Insert a meat thermometer into center of the meat.
- Roast in a 425°F oven for 30 to 40 minutes or until the meat thermometer registers 155°F. Brush orange marmalade over the top of the meat. Roast for about 5 minutes more or until the meat thermometer registers 160°F.

1 cup shredded Mexican-blend cheese
¼ cup sour cream
2 tablespoons lime juice

- Preheat grill to medium-high.
- Cook beef in a large nonstick skillet over medium-high heat, breaking it up with a wooden spoon, until cooked through, about 5 minutes. Stir in beans, chili powder, cumin and salt. Remove from heat and stir in ½ cup salsa. Transfer to a medium bowl.
- Roll dough out on a lightly floured surface into a 12-inch oval.
- Oil the grill rack. Grill the dough until puffed and lightly browned, 1 to 3 minutes. Turn it over using tongs. Spread the beef mixture on the crust and sprinkle with cheese. Grill until the cheese is melted and the crust is lightly browned on the bottom, 2 to 3 minutes more. Transfer to a cutting board.
- Mix sour cream and lime juice. Top the pizza with lettuce, the remaining ¼ cup salsa and the sour cream mixture. Garnish with cilantro and jalapeños, if desired.

- Divide asparagus into six portions. Wrap two slices of bacon around each portion and secure with toothpicks. In a small bowl, combine the remaining ingredients.
- Grill asparagus bundles, covered, on greased rack over medium 8 to 10 minutes or until bacon is crisp and asparagus is crisp-tender, turning frequently to avoid burning and brushing with honey mixture the last 2 minutes.

¾ cup soft whole-wheat bread crumbs

- Preheat oven to 350°F. Combine bread crumbs, egg, half of the garlic, half of the rosemary, and the ground pepper in a large bowl. Add ground beef; mix well. Shape the meat mixture into 1½-inch meatballs. Place the meatballs in a foil-lined 15×10-inch baking pan. Bake about 15 minutes or until done in centers (160°F). Set aside.
- Heat oil over medium heat in a large pot. Add carrot, bell pepper, onion, and the remaining garlic; cook for 5 minutes, stirring occasionally. Add beef stock, the water, Great Northern beans, barley, and the remaining rosemary. Bring to boiling; reduce heat. Cover and simmer about 15 minutes or until the barley is tender.
- Add the meatballs to the barley mixture; heat through. Stir in spinach just before serving.

- Preheat oven to 400°F.
- Heat 2 teaspoons oil in a large skillet over medium heat. Add onion and cook, stirring, until beginning to brown, about 5 minutes. Stir in caraway (or fennel) seeds and cook until fragrant, about 30 seconds. Add apple and wine; increase heat to medium-high and cook, stirring, until most of the wine has evaporated, about 5 minutes. Stir in sausage, sauerkraut, vinegar, mustard and pepper. Transfer to a 9-by-13-inch (or similar 3-quart) baking dish.
- Toss potato slices with the remaining 2 teaspoons oil, butter and salt in a bowl until coated. Cover the sauerkraut mixture with tightly overlapping potato slices.
- Bake the casserole until the potato edges start to get crispy, 50 minutes to 1 hour. Cool for 10 minutes before serving.

- Soak dates in hot water to cover in a medium bowl for 10 minutes. Drain, reserving the soaking water.
- Meanwhile, line an 8-inch-square baking pan with parchment paper, leaving extra hanging over 2 sides. Lightly coat with cooking spray.
- Process oats in a food processor until finely ground. Add the drained dates, nut butter, cocoa powder and salt; process until very finely chopped. If the mixture seems dry, add a little of the reserved soaking water, 1 tablespoon at a time. Spread the mixture evenly and firmly into the prepared pan. Refrigerate until cold, about 1 hour. Remove from the pan by lifting the overhanging parchment. Cut into 16 squares.

8 ounces whole-wheat fettuccine
1 tablespoon extra-virgin olive oil
12 ounces peeled and deveined raw shrimp (26-30 per pound)

- Bring 7 cups of water to a boil. Add fettuccine, stirring to separate the noodles. Cook until just tender, 7 to 9 minutes. Reserve ½ cup of the cooking water and drain.
- Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add shrimp and cook, stirring occasionally, until pink and curled, 2 to 3 minutes. Transfer the shrimp to a bowl.
- Add butter to the pan and reduce heat to medium. Add garlic and crushed red pepper; cook, stirring often, until the garlic is fragrant, about 1 minute. Add arugula and cook, stirring, until wilted, about 1 minute. Reduce heat to low. Add the fettuccine, yogurt, lemon zest and the reserved cooking water, ¼ cup at a time, tossing well, until the fettuccine is fully coated and creamy. Add the shrimp, lemon juice and salt, tossing to coat the fettuccine. Remove from the heat and toss with Parmesan.
- Serve the fettuccine topped with basil and more Parmesan, if desired.

- Bring 1 inch of water to a boil in a large pot fitted with a steamer basket. Add broccoli, cover and cook until tender-crisp, 3 to 4 minutes.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add bell pepper, onion and garlic; cook, stirring often, until the vegetables begin to soften, about 3 minutes. Add the steamed broccoli and cook, stirring, for 3 minutes.
- Whisk peanut butter, tamari, vinegar, sugar and cornstarch in a small bowl until smooth. Stir into the vegetables. Cook, stirring, until the sauce thickens, about 1 minute. Sprinkle with sesame seeds.

- Preheat oven to 350°F. Coat twelve 2½-inch muffin cups with cooking spray. Cut four of the bacon slices crosswise into thirds; chop remaining bacon.
- In a 12-inch skillet cook large bacon pieces over medium until crisp. Drain bacon on paper towels; discard drippings. Add chopped bacon, apples, and onion to skillet. Cook over medium 5 minutes, stirring occasionally. Add sweet potato; cook 10 minutes or just until potato is tender, stirring frequently. Stir in thyme and pepper.
- Divide potato mixture among prepared muffin cups. In a medium bowl combine egg and milk; pour over potato mixture (cups will be full). Top with cheese.
- Bake 25 minutes or until puffed and a knife comes out clean. Cool in cups 5 minutes. Remove from cups. Top with large bacon pieces. Serve warm.

1 cup whole-wheat dry breadcrumbs or ½ cup plain dry breadcrumbs. You can use panko breadcrumbs which is in the natural-foods section of large supermarkets. To make your own breadcrumbs, trim crusts from firm sandwich bread. Tear the bread into pieces and process in a food processor until coarse crumbs form. (To make fine dry breadcrumbs, process until very fine.) Spread on a baking sheet and bake at 250°F until dry, about 10 to 15 minutes. One slice of bread makes about ⅓ cup dry breadcrumbs.
1 cup whole-grain cereal flakes
1 teaspoon lemon pepper
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon salt
½ cup all-purpose flour
2 large egg whites, beaten
1 pound tilapia fillets, cut into ½-by-3-inch strips

1 – 8 to 10-ounce turkey tenderloin

- Preheat oven to 425°F. Place a metal rack in a shallow baking pan and coat with cooking spray. Cut turkey into eight evenly sized “nuggets”; set aside.
- Place egg in a small bowl and beat lightly. In another small bowl, stir together the panko, Parmesan cheese and Italian seasoning. Dip each nugget into egg and then panko mixture, rolling to coat evenly. Place on prepared rack. Lightly coat each nugget with cooking spray. Bake for 20 minutes or until turkey is golden and crispy (165°F).
- Meanwhile, place Asian cabbage mix in a medium bowl; set aside. In a small bowl, whisk together ¼ cup of the Greek yogurt, 1 teaspoon of the honey, 1 teaspoon of the mustard and the salt. Combine yogurt mixture with the cabbage. Stir in the sliced almonds and the dried cranberries.

- Combine yogurt, mayonnaise, tarragon, salt and pepper in a large bowl. Add the cold chicken, celery, grapes (if using) and pecans; stir to combine.

- Heat oil in a 10-inch cast-iron skillet or nonstick oven proof skillet over medium heat. Add kale, season with ¼ teaspoon salt and ⅛ teaspoon pepper, and sauté for 2 minutes. Stir in marinara (or tomato) sauce and bring to a simmer.
- Make 8 wells in the sauce with the back of a spoon and carefully crack an egg into each well. Season the eggs with the remaining ¼ teaspoon salt and ⅛ teaspoon pepper.
