Skinny Spinach Lasagna

INGREDIENTS:

2 tablespoons butter

1 tablespoon minced garlic

2 teaspoons minced fresh thyme

6 ounces fresh spinach

2 lbs. ricotta cheese (you can substitute 1 lb. whole milk and 1 lb. nonfat)

1 egg

1/2 teaspoon salt

1/4 teaspoon nutmeg

a squeeze of lemon juice (optional, to taste)

12 no-boil lasagna noodles

1 – 24 ounce jar of spaghetti or marinara sauce

2 cups shredded mozzarella cheese

INSTRUCTIONS:

  1. Melt the butter in a large skillet over medium heat. Add the garlic and thyme; saute for 2-3 minutes. Add the spinach; saute until just barely wilted, about 2 minutes. Remove from heat.
  2. In a large bowl, combine the ricotta, egg, salt, nutmeg, and a squeeze of lemon juice. Add the spinach and stir to combine. Transfer some of the mixture to a food processor and pulse a few times to break up some of the spinach pieces (totally optional, but makes for a really nice texture).
  3. Preheat the oven to 375 degrees. Spread a little bit of tomato sauce in the bottom of a 9×13 pan. Layer with 3 lasagna noodles, 1/3 of the spinach mixture, 1/4 of the tomato sauce, and 1/4 of the cheese. Repeat and pour 1/2 cup water over the two layers. Repeat once more, ending with noodles, sauce, and cheese. Pour 1/2 cup water over the whole thing again and cover tightly with oiled foil.
  4. Bake for 30-40 minutes; when the liquid is bubbling and the noodles have softened, remove the foil and bake uncovered for 10 more minutes. Let stand for 10-15 minutes before serving so that the lasagna noodles can soak up all the extra moisture.

Spread a small handful of rice noodles over and sprinkle with cashews and green onion. Top with basil leaves, mint and coriander. Tightly roll up rice paper, folding in sides when half rolled. (Don’t worry if the first one is messy – it usually takes at least one to get the feel of rolling the salad rolls). Repeat with remaining rice paper rounds. Wrap rolls with damp paper towel, store in a resealable bag and chill.

4. Salad rolls can be made up to a day in advance. To serve, slice each roll in half diagonally and serve with cashew dipping sauce.

1 teaspoon Worcestershire sauce

1 teaspoon salt, divided

½ teaspoon ground pepper

2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry

¾ cup part-skim ricotta

¼ cup grated Parmesan cheese

2 tablespoons extra-virgin olive oil

½ cup chopped onion

2 cloves garlic, minced

1½ cups no-salt-added crushed tomatoes

¼ cup dry red wine

½ teaspoon dried basil

  5. Meanwhile, heat oil in a medium saucepan over medium heat. Add onion and garlic; cook, stirring, until softened, 3 to 5 minutes. Stir in tomatoes, wine, basil, oregano and the remaining ½ teaspoon salt; bring to a simmer. Reduce heat to low and cook, stirring, until the onion is soft and the sauce has thickened, about 10 minutes.
  6. Run a knife along the sides of the loaf pan to loosen the meatloaf. Invert the meatloaf onto a cutting board. Cut into 8 slices. Serve with the tomato sauce.

Easy Lemon Chicken

INGREDIENTS

  • 1 3/4 pounds Chicken tenders (fresh or individually frozen)
  • 1/3 cup flour
  • salt and pepper (to taste)
  • 2 Tbl Oil of your choice
  • 3 tablespoons butter
  • 1 cup chicken stock
  • Juice of 1 1/2 large or 2 small Lemons
  • 1 Lemon (sliced, for garnish)
  • Chopped Parsley (for garnish)

INSTRUCTIONS

  1. Put a cold frying pan on the burner and don’t turn it on.
  2. Put 2 tablespoons of oil in bottom of pan.
  3. Put chicken tenders in pan.
  4. Sprinkle salt and/or pepper over the chicken.
  5. Sprinkle flour over the chicken, as thick or thin as you like.
  6. Flip the chicken over and repeat.
  7. Turn on stove on about medium/low heat, depending on your stove.
  8. When chicken is browned on one side, flip over and cook the other side.
  9. Remove chicken from pan and set aside if you want your chicken crispy, with the lemon sauce on the side. Or keep in the pan if you want the chicken to absorb the lemon sauce.
  10. If you have a good amount of oil and cooked flour/breading in the pan, you don’t need to do anything. If you don’t have enough, add more. Usually there is plenty of oil, but you may need more flour so your sauce isn’t too oily and thin and it’s a lot easier to add the flour now. If you added flour, stir it around to absorb the oil.
  11. Pour the chicken stock and lemon juice into the pan and bring to a simmer. Let simmer for 2-3 minutes, or until sauce has reduced by half and thickened.
  12. Check seasonings and add more salt, if desired.
  13. Turn off the heat and stir in the butter.
  14. Add lemon slices and chopped fresh parsley to the pan to garnish.

Smores Banana Ice Cream

Spinach Stuffed Chicken Breasts

Ingredients:

3 chicken breasts

8 oz chopped frozen spinach, cooked according to package directions and squeezed dry.

3 oz feta, crumbled ( about ½ cup )

4 oz cream cheese

1 clove garlic, diced

¼ teaspoon salt, divided

⅛ teaspoon pepper

1 tablespoon olive oil

Instructions:
  1. Preheat oven to 450 degrees fahrenheit.
  2. Mix the chopped frozen spinach, feta, cream cheese, garlic and half of the salt in a medium sized bowl.
  3. Cut a pocket into each chicken breast. If you are unsure of how to cut a pocket into the chicken without also cutting a pocket into your hand, try this: One at a time, place the chicken flat on a cutting board, and press a large spatula ( or something else that cannot be stabbed, i.e. DO NOT USE YOUR HAND) flat on top of the breast. Make sure that you are pressing the spatula down hard enough to hold the chicken in place. You may need to actually dig the edge of the spatula into the meat just a little bit to accomplish this. Insert the knife ⅔ of the way into the side of the thickest part of the chicken, and slice down to the thinnest part, stopping before you cut through; you want a pocket not a flap.
  4. Separate the spinach and cheese mixture into three parts, and roll into thick logs. Stuff each log into the pocket you made in the chicken breasts. Season with remaining salt and pepper.
  5. Heat the olive oil in an ovenproof pan set over medium high heat, then add the stuffed chicken, “top” side down. Cook for 5 minutes, then flip the chicken over.
  6. Place the pan into the oven, and bake for 10 minutes. If your chicken breasts are extraordinarily thick, cook for 2 to 5 minutes longer, or until juices run clear when you poke the chicken with a fork.
