Low-Carb Bacon And Broccoli Egg Burrito

Ingredients

1 slice bacon
1 cup chopped broccoli
¼ cup chopped tomato
1 large egg
1 tablespoon reduced-fat milk
1 scallion, sliced
⅛ teaspoon salt
⅛ teaspoon ground pepper
1 teaspoon canola or avocado oil
2 tablespoons shredded sharp Cheddar cheese

Preparation

  1. Cook bacon in a medium nonstick skillet over medium heat, turning once or twice until crisp, 4 to 6 minutes. Remove to a paper towel-lined plate. Add broccoli to the skillet and cook, stirring, until soft, about 3 minutes. Stir in tomato and transfer to a small bowl.
  2. Meanwhile, whisk egg, milk, scallion, salt and pepper together in another bowl. When the vegetables are cooked, wipe out the skillet. Add oil to the skillet and heat over medium heat. Add the egg mixture, tilting to coat the bottom of the skillet. Cook, undisturbed, until set on the bottom, about 2 minutes. Using a thin, wide silicone spatula, carefully flip the egg “tortilla”. Spread the cheese over top and cook until completely set, about 1 minute more. Transfer to a plate. Fill the lower half of the “tortilla” with the broccoli mixture and top with the bacon slice. Carefully roll into a “burrito”.

Curly Kale Slaw

INGREDIENTS

6 large kale leaves, washed, the excess water shaken off
2 tablespoons fresh lemon juice (from about half a lemon)
2 tablespoons olive oil
1 garlic clove, peeled and minced
1⁄4 teaspoon kosher salt
freshly grated Parmesan cheese
1⁄2 cup toasted walnut pieces (if you like) (To toast the walnuts, put them on a small baking sheet in a 250-degree oven until they are fragrant and look a shade darker, about 5 minutes)

INSTRUCTIONS

  1. Strip the ruffly leaves off of the kale’s stems by grasping the bottom of each stem and pulling your hand up along it forcefully. The leaves will come o and leave behind the tough stems, which you can throw away.
  2. Stack and bunch the leaves together on the cutting board and use the knife to cut across the stack so that you end up with skinny slivers of kale.
  3. Put the lemon juice, oil, garlic, and salt in the large bowl, then add the kale and toss it all around with the tongs.
  4. Add the cheese and walnuts, if using, and serve right away.

One-Eyed Jack

INGREDIENTS

1 slice whole-wheat or multigrain bread
1  large egg
2 teaspoons olive oil
Salt and black pepper

INSTRUCTIONS

  1. Use the open mouth of the glass to cut a hole out of the center of the slice of bread. Set aside the bread frame and the cutout circle of bread.
  2. Crack the egg into the bowl gently, being careful not to break the yolk.
  3. Put the pan on the stove and turn the heat to medium. When the pan is hot (flick some water on—it should dance and evaporate immediately), add the oil, then lay the bread frame into it carefully.
  4. Gently pour the egg into the hole, and season the egg with a pinch of salt and pepper. (If you like, you can also fry the cutout circle of bread alongside.)
  5. Cook the bread frame until it has browned underneath and the egg in the hole has started to set, about 2 minutes, then carefully flip the whole thing. Cook the other side until the egg yolk is as firm as you like it—about 30 seconds to a minute longer. (If you’re frying the cutout, flip that too.)
  6. Eat right away.

Avocado And Mango Salsa

1⁄4 teaspoon salt
1⁄4 teaspoon black pepper

INSTRUCTIONS

  1. Put the avocado, mango and tomatoes, and feta cheese, if using, in the bowl and gently stir with the large spoon.
  2. Drizzle with the oil, lemon or lime juice, salt, and pepper. Now taste it. Does it need more lemon or lime juice? More salt or pepper? If so, add it and taste again.
  3. Cover and refrigerate up to 4 hours or serve right away, over grains or greens.

Ribbony Shrimp and Pasta Scampi

Ingredients

Kosher salt

8 ounces whole wheat spaghetti

1 yellow squash

1 zucchini

1 pound peeled and deveined medium shrimp, tails removed

Freshly ground black pepper

2 tablespoons olive oil

1 cup cherry tomatoes, halved

4 cloves garlic, finely chopped

Pinch crushed red pepper flakes, optional

1/2 cup low-sodium vegetable or chicken broth

2 tablespoons chopped fresh chives

Directions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions for al dente.
  2. While the pasta cooks, trim the top and bottom off of each squash. Peel the squash in ribbons into a colander, using a vegetable peeler, turning the squash as you peel. Stop peeling the squash when you only have the center core of seeds left. Discard the core and seeds.
  3. Reserve 1/4 cup of the pasta water, and then drain the pasta over the squash ribbons. Put in a medium bowl and toss to evenly distribute the pasta with the squash ribbons.
  4. Toss the shrimp with 1/2 teaspoon kosher salt and some pepper. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the shrimp, spread into a single layer and cook without stirring, until just turning pink around the edges, about 2 minutes. Stir the shrimp, add the tomatoes, garlic and pepper flakes and continue to cook until the tomatoes have softened and the garlic has toasted, about 1 minute. Add the pasta and squash ribbons, broth and the remaining 1 tablespoon olive oil. Cook, tossing, until warmed through and most of the liquid has been absorbed. Add the pasta water a bit at a time, if needed, if the noodles seem dry.
  5. Season with additional salt and pepper. Divide among 4 bowls and top with the chives.

2 tablespoons vegetable oil

1 large pork tenderloin, trimmed and cut into 1-inch chunks (about 1 1/2 pounds)

Kosher salt and freshly ground black pepper

1 tablespoon chili powder

One 8-ounce sweet potato, peeled and cut into 1/2-inch chunks

2 cups low-sodium chicken broth

1 medium Haas avocado

  4. Ladle the stew into large, deep bowls. Top with the yogurt mixture, garnish with the cabbage, avocado, lime and cilantro and serve with the tortillas.

Roasted Salmon With Shallot Grapefruit Sauce

Ingredients

4 skinless salmon fillets, 5 to 6 ounces each

1/4 teaspoon salt, plus more for seasoning

2 ruby red grapefruits

2 teaspoons olive oil

1 tablespoon minced shallot

1 teaspoon freshly grated ginger

2 1/2 teaspoons honey

Then, with a paring knife, remove each segment of fruit from its casing and cut the segments in half. Set the segment pieces aside. Juice the other grapefruit and set the juice aside.
  4. In a medium skillet, heat the oil over a medium heat. Add the shallot and saute until softened, about 2 minutes. Add the ginger, grapefruit juice, honey, and cayenne pepper and bring to simmer. Cook until sauce is reduced by about half about, 10 minutes. Add lemon juice and season with salt, to taste. Right before serving, toss the grapefruit pieces and basil into the sauce. Spider Web Guacamole

This webbed guacamole is a super-easy way to make a themed appetizer for your next Halloween party. Mexican crema (or sour cream) is used for the web and black olives make an edible spider. The avocado skull is a spooky bonus.

Ingredients:

4 cups guacamole

¼ cup Mexican crema or sour cream

Lime juice, if needed

2 pitted black olives

Blue corn tortilla chips, for serving

1 firm avocado, skin-on

Directions:

1. For the web: Put a large round shallow bowl on a larger round platter. Fill the bowl with the guacamole and smooth the top with a spoon or offset spatula. Fill a squeeze bottle or pastry bag with Mexican crema or sour cream (thin it out with some lime juice if needed). Pipe 4 concentric circles of crema onto the guacamole. Using the tip of a knife or skewer, pull lines from the center circle out, creating a spider web pattern.

2. For the spider: Slice 1 olive in half lengthwise and use one of the halves for the spider body. Slice 8 long spider legs from the remaining 1 1/2 olives. Arrange the spider on the web. Surround the bowl of guacamole with the tortilla chips.

3. For the skull: Using a paring knife, make 2 eyes on the wide end of the avocado, cutting through the skin and flesh all the way down to the pit; discard the skin and flesh. Cut an upside-down heart shape just through the skin for the nose, then remove the skin, leaving the flesh showing. For the mouth, cut a long rectangle just through the skin and remove it. Use a skewer or the tip of a knife to draw lines on the flesh for teeth.

½ cup quick-cooking rolled oats

6 oz kale, stems removed and leaves roughly chopped (about 4 packed cups)

4 cloves garlic, finely minced

1 large yellow onion, roughly chopped

1 large egg

½ cup grated Parmesan

¼ cup skim milk

Kosher salt and freshly ground black pepper

1 lb(s) 99% fat-free ground turkey

2 Tbsp extra-virgin olive oil

1 28-oz can no-salt-added crushed tomatoes

2 sprigs oregano

Pinch of crushed red pepper flakes

12 oz whole-wheat angel hair pasta

Add the egg, 2 tablespoons of the Parmesan, milk, 3/4 teaspoon salt and 1/4 teaspoon pepper, and pulse until just combined. Transfer the mixture to a large mixing bowl, add the turkey and mix with your hands until well combined. Cover with plastic wrap, and refrigerate for 30 minutes.

2. Meanwhile, bring a large pot of water to a boil.

3. Heat the oil in a large, straight-sided skillet or Dutch oven over medium-high heat. Add the remaining onions and 1/4 teaspoon salt, and cook, stirring occasionally, until softened and lightly browned in spots, 6 to 8 minutes. Overnight Breakfast Egg Casserole

Ingredients:

1 pound sweet Italian turkey sausage

1 1/2 cups diced sweet onion (from about half a large onion)

8 ounces fresh sliced mushrooms

2 cloves garlic, minced

2 cups frozen shredded hash brown potatoes

2 cups shredded reduced-fat sharp cheddar cheese, divided

1 cup diced green pepper (from about 1 small-medium pepper)

2-3 plum tomatoes, seeded and diced (to equal about 1 – 1 1/4 cups)

1/2 cup chopped green onions (from about 6 onions)

12 eggs

1 3/4 cup non-fat milk

1 1/2 teaspoons dried parsley

1 teaspoon kosher salt

1 teaspoon dried basil

1/4 teaspoon black pepper

Directions

  1. In a large non-stick skillet over medium heat, cook sausage, onions, mushrooms, and garlic until sausage is no longer pink and mushrooms have given off some of their liquid, about 10 minutes. Drain the liquid.
  2. In a 9 x 13 pan coated with cooking spray, layer potatoes (there is no need to thaw them), sausage mixture, 1 cup cheese, green peppers, tomatoes, and green onions.
  3. In a medium bowl, combine eggs, milk, parsley, salt, basil, and pepper. Whisk thoroughly to combine, then add remaining 1 cup of cheese and whisk again. Pour egg mixture evenly over other ingredients in baking pan. Cover with plastic wrap and refrigerate overnight. (Alternately, you can bake this casserole immediately.)
  4. In the morning, preheat the oven to 375°F.
  5. Bake casserole, uncovered, for about 60-70 minutes, or until egg in middle is just set and edges are lightly golden brown.
  6. Remove from oven and allow to cool for 10 minutes before cutting and serving.
