Chicken Breasts Stuffed with Pimiento Cheese

Ingredients

½ cup shredded Gouda cheese, preferably smoked

2 tablespoons chopped scallion

1 tablespoon sliced pimientos, chopped

1 teaspoon paprika, divided

4 small boneless, skinless chicken breasts (1¼-1½ pounds total), trimmed and tenders removed (see Tip)

½ teaspoon salt, divided

½ teaspoon freshly ground pepper, divided

1 tablespoon extra-virgin olive oil

Preparation

  1. Preheat oven to 400°F.
  2. Combine Gouda, scallion, pimientos and ½ teaspoon paprika in a small bowl.
  3. Cut a horizontal slit along the thin, long edge of each chicken breast, nearly through to the opposite side, and open like a book. Sprinkle the breasts with ¼ teaspoon each salt and pepper. Divide the cheese filling among the breasts, placing it in the center of each. Close the breast over the filling, pressing the edges firmly together to seal. Sprinkle the breasts with the remaining ½ teaspoon paprika, ¼ teaspoon salt and pepper.
  4. Heat oil in a large ovenproof skillet over medium-high heat. Add the chicken and cook until browned on one side, about 2 minutes. Turn the chicken over and transfer the skillet to the oven. Bake until the chicken is no longer pink in the center and an instant-read thermometer inserted into the thickest part registers 165°F, about 15 minutes.

Vegetable Salad Rolls

INGREDIENTS

Vegetable Salad Rolls

½ pkg rice noodles

2 Tbsp rice vinegar

salt

8 large rice paper rounds

½ cup finely shredded zucchini

¼ cup finely shredded carrot

⅓ cup finely shredded cabbage

2 Tbsp chopped unsalted cashews

1 green onion, sliced on an angle

¼ cup fresh basil leaves (preferably Thai basil)

¼ cup fresh mint leaves

¼ cup fresh coriander leaves

Cashew Dipping Sauce

3 clove 3 garlic cloves, minced

tsp finely grated fresh ginger

¼ tsp chili pepper flakes

1 Tbsp sesame oil

1 Tbsp tomato paste

3 Tbsp cashew butter

3 Tbsp hoisin sauce

1 tsp sugar

1 cup water

DIRECTIONS

Vegetable Salad Rolls

1. In a bowl soak, noodles in very hot water to cover 15 minutes and drain well in a colander. Reserve half of noodles for another use. With scissors cut remaining noodles into 3- to 4-inch lengths and in a small bowl toss with vinegar and salt to taste.

2. In a shallow baking pan (or a pie plate works well) dip a round of rice paper in hot water until pliable, just about 15 seconds.

3. Carefully lay rice paper on a tea towel. Arrange a bit of zucchini, then carrot, then cabbage in a row at one end of rice paperl. Spread a small handful of rice noodles over and sprinkle with cashews and green onion. Top with basil leaves, mint and coriander. Tightly roll up rice paper, folding in sides when half rolled. (Don’t worry if the first one is messy – it usually takes at least one to get the feel of rolling the salad rolls). Repeat with remaining rice paper rounds. Wrap rolls with damp paper towel, store in a resealable bag and chill.

4. Salad rolls can be made up to a day in advance. To serve, slice each roll in half diagonally and serve with cashew dipping sauce.

Crumble

3 ½ cups gluten-free oats

2 ½ cups raw almonds

1 tsp cinnamon

¼ tsp sea salt

4 cups dates, pitted

Filling

2 cups natural peanut butter

2 ripe bananas

½ tsp sea salt

1 cup dates, pitted

2 Tbsp water

1 cup jam of your choice

3 Tbsp chia seeds (optional)

DIRECTIONS

Crumble

1. Grind almonds in a food processor until they become a fine meal and place into a mixing bowl. Grind oats the same way, then add the almond meal back in.

Filling

1. Blend peanut butter, bananas and sea salt together in a food processor.

2. In the same style as the almonds/oats mixture, feed the dates in a few at a time until the mixture is smooth. If the mixture seems too thick to spread with a spatula, add a little water as necessary.

Grilled Vegetable Platter

INGREDIENTS

3 red bell peppers, seeded and halved

3 yellow squash (about 1 lb total) , sliced lengthwise into 1/2-inch-thick rectangles

3 zucchini (about 12 oz total) , sliced lengthwise into 1/2-inch-thick rectangles

3 Japanese eggplant (12 oz total) , sliced lengthwise into 1/2-inch-thick rectangles

12 cremini mushrooms

1 bunch asparagus (1 lb) trimmed

12 green onions, roots cut off

¼ cup olive oil, plus 2 Tbsp

Salt and freshly ground black pepper

3 Tbsp balsamic vinegar

2 cloves garlic, minced

1 tsp chopped fresh Italian parsley leaves

1 tsp chopped fresh basil leaves

½ tsp finely chopped rosemary leaves

DIRECTIONS

1. Place a grill pan over medium-high heat or prepare the barbecue (medium-high heat). Brush the vegetables with 1/4 cup of the oil to coat lightly. Sprinkle the vegetables with salt and pepper. Working in batches, grill the vegetables until tender and lightly charred all over, about 8 to 10 minutes for the bell peppers; 7 minutes for the yellow squash, zucchini, eggplant, and mushrooms; 4 minutes for the asparagus and green onions. Arrange the vegetables on a platter. The key to getting those great grill marks is to not shift the vegetables too frequently once they’ve been placed on the hot grill.

2. Meanwhile, whisk the remaining 2 tablespoons of oil, balsamic vinegar, garlic, parsley, basil, and rosemary in a small bowl to blend. Add salt and pepper to taste. Drizzle the herb mixture over the vegetables. Serve the vegetables, warm or at room temperature.

Chicken Avocado Lime Soup

Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts*
  • 1 Tbsp olive oil
  • 1 cup chopped green onions (including whites, mince the whites)
  • 2 jalapeños , seeded and minced (leave seeds if you want soup spicy, omit if you don’t like heat)
  • 2 cloves garlic , minced
  • 4 (14.5 oz) cans low-sodium chicken broth
  • 2 Roma tomatoes , seeded and diced
  • 1/2 tsp ground cumin
  • Salt and freshly ground black pepper
  • 1/3 cup chopped cilantro
  • 3 Tbsp fresh lime juice
  • 3 medium avocados , peeled, cored and diced
  • Tortilla chips , monterey jack cheese, sour cream for serving (optional)
  1. In a large pot heat 1 Tbsp olive oil over medium heat. Once hot, add green onions and jalapenos and saute until tender, about 2 minutes, adding garlic during last 30 seconds of sauteing. Add chicken broth, tomatoes, cumin, season with salt and pepper to taste and add chicken breasts. Bring mixture to a boil over medium-high heat. Then reduce heat to medium, cover with lid and allow to cook, stirring occasionally, until chicken has cooked through 10 – 15 minutes (cook time will vary based on thickness of chicken breasts). Reduce burner to warm heat, remove chicken from pan and let rest on a cutting board 5 minutes, then shred chicken and return to soup. Stir in cilantro and lime juice. Add avocados to soup just before serving (if you don’t plan on serving the soup right away, I would recommend adding the avocados to each bowl individually, about 1/2 an avocado per serving). Serve with tortilla chips, cheese and sour cream if desired.
  2. *For thicker chicken breasts, cut breasts in half through the length (thickness) of the breasts, they will cook faster and more evenly.
